This chowder is creamy and delicious and especially great on a cold snowy day. You can buy creamed corn already done in a can. In my case I had frozen corn off the cob that I had done in the summertime and used that to make my own creamed corn for the chowder. You can use any kind of ham you'd like as well. I had cooked a ham in the crockpot a few days before and used the leftover for the chowder.

Ingredients
- ▢ 2 (17 oz.) cans cream style corn
- ▢ 1 1/2 cups milk (I use whole milk)
- ▢ 1 cup grated Cheddar cheese
- ▢ 1 Tbsp. instant minced onion
- ▢ dash salt & pepper
- ▢ 2 cups chopped cooked ham
- ▢ parsley
- ▢ 2 hard-cooked eggs sliced (can use more if you like more egg in chowder)
Instructions
- In a saucepan, heat corn, milk, cheese, onion, salt, pepper and ham. Add parsley and fold in sliced eggs. Stir constantly or it will burn on bottom of saucepan. I used my dutch oven to make it in so that I could avoid burning anything.
How to make creamed corn
Ingredients
- ▢ 16 ounces frozen corn or 3 cups fresh corn or 4 cobs
- ▢ 3 tablespoons unsalted butter
- ▢ 1/4 cup flour (or to make gluten free use a gluten free flour or cornstarch)
- ▢ 1 cup whole milk
- ▢ 1/2 - 1 cup heavy cream or half & half
- ▢ 1 tablespoon sugar (if desired)
- ▢ 1/2 teaspoon kosher salt
- ▢ 1/8 teaspoon freshly ground black pepper
Instructions
- In a large skilled over medium heat, melt the butter.
- Add in the frozen corn and cook until it is thawed and soft, about 5 minutes. (If you are using fresh corn, cook until it is tender.)
- Whisk in the flour. This will make things gummy but that is ok. Cook for about 30 seconds. Slowly whisk in the whole milk. You should add a little bit, allow it to get fully combined with the flour and butter before adding in more. It will get easier to add the further along you go and you can add it more quickly.
- Add in 1/2 cup of heavy cream or half & half. Bring everything to a boil and then simmer for 5 minutes. If after simmering it is too thick, add another 1/4 cup to 1/2 cup of the cream.
- Stir in sugar, add in the salt & pepper. Taste and add more as needed.
